		<description>Hi Marieke,

I&#039;m sure you&#039;ve heard of this new French bakery in Amsterdam: http://www.lefournil.nl/index.html
It was very busy and they had a large assortment of bread. A bit more expensive than most bakeries, but worth it!

They just opened a branch in Hilversum.

Happy Holidays!

		<description>Hello Sandra,

Your friend is right for the most part. The majority of people in Holland eat these sort of pre-sliced brown and white breads and soft (white)rolls, either from the supermarket or the bakery. 90% of these bakeries in Holland get their flour from the same supplier. There is diversity in types of bread (like the tijgerbrood, al kinds of breads with seeds and nuts, multi-grain etc, but it&#039;s all the same quality of flour and made in great quantities in factories). This bread is not all bad, but especially the very cheap bread is more like chewing gum than bread and forget about the crunchy crust. But the good news is that there is also another (much smaller obviously) &#039;movement&#039; of bakers (the ones I mention in the list for example) that bake unbelievably good breads the artisanal way. Better quality ingredients, stone floors, longer proving times etc. so lots more taste. Like with other food items like coffee, chocolate etc. it&#039;s a very specific group of quality seeking people who visit these places and appreciate the quality enough to pay more.
The good news is also that Holland is small and densely populated so good bread does not have to be far away.

I think this story is the same in many countries.

Another and also more positive way of looking at bread and baking in Holland is the historical perspective. We have all kind of (regional) specialities that we could and should be proud of and that are delicious).

I am thinking of the Friese Suikerbrood (Frysian Sugar Loaf)
The staple slice of whole wheat bread with cheese (bruine boterham met kaas)can be very nice when fresh and of good quality
Kruidkoek (spice cake)
Kerstbrood (Christmas bread with almond paste)

Please let me know if I can answer any specific question you might have.

		<description>Hello Marieke
I&#039;m actually working on a book project about breads from all over the world and I would appreciate if you could help me with the traditions of bread in Holland. A few months ago, a friend of mine spent a few days in Holland and he told me that most of the breads there were molded, black or white and mostly bought in supermarkets. He told me about Tijerbrood, knipbruinn, poempen licht.. but he never told me about the wonderful artisan breads as shown on the links you kindly gave here. Could you please help me??
Thank you so much

		<description>Hallo!
Groeten,
Paula Pauline en Lisette</description>
