Winter Porridge…for Two

As a child I really hated porridge. I couldn’t even look at other people eating it.
After travelling through Scotland, where my husband was offered oatmeal porridge for breakfast every morning, he announced ‘I am going to make this at home’ with a big smile. But I still would not try it, too many bad memories, thank you very much. And porridge with salt didn’t sound at all appealing to me. Well, as long as I can stick to my granola, let him have the cooked oatmeal. But then I came across some recipes that ‘tweak’ the porridge into something that, in my humble opinion, is more of a dessert. Now we are talking! Basically you add nice stuff like vanilla, grated apple, cinnamon and soft brown sugar to the equation and voila…porridge suddenly works for me. I quit like it, I get energy from it and as long as I do not think of the word porridge I am completely fine!
This is what you need for the Winter Porridge for Two
60 grams of rolled oats
600 ml milk
half a teaspoon of vanilla extract
pinch of salt
a teaspoon of cinnamon
soft dark brown sugar to taste
small grated apple
Make the porridge by cooking the oats with the salt in 500 ml of the milk, while stirring regularly. Cook for 5 to 8 minutes, until it thickens. Add the vanilla extract, the grated apple and the cinnamon and cook for another 2 minutes. Take of the heat and stir in the last 100 ml of cold milk. Serve with a nice heap of soft dark brown sugar on top. Enjoy!
