Sl*t Red Raspberry Jelly!

Ever since my husband saw this recipe in Nigella’s Forever Summer book he had to make it. He has a sweet and soft spot for jellylike puddings but it somehow took him a few years to get started on this recipe. And of course now he’s sorry he never did. The combination of wine jelly with the great taste of raspberries are a winner according to him. The Raspberry is the queen of fruits. The tart fruit flavour you cannot compare to any other fruit. It is the best! You need a good Chardonnay wine, one that tastes great when you drink it on its own. Yesterday my husband finally made this recipe. He used a non oaked Chardonnay, which he thinks works best. With a big smile he served it with a huge amount of cream… And he was right it tasted like pudding heaven in a bowl! The good news is, we still have one portion to share for tonight!
