i also love avocado... could eat it every day. i also like it very simple with a vinaigrette spooned into ste stoned half, with crusty bread and cream cheese. or, as tried recently, mashed up with pesto for a pasta sauce - divine!
my trick for ripening them is to wrap in newspaper and place bananas on top - they're the only fruit that ripen off the tree and therefore encourage the avos to ripen, too!

Hi Ari - fond of the chili beans too!

Pamela - another nice lunch tip. Thanks!

Susan - Thank you so much. A bit jealous at the moment of people living in South California, nothing but damp and rainy weather here.

Kristen - I introduced them to my parents and after a few attempts..they are converted. So don't give up!

I too am a huge avocado fan. Packed into a sandwich with tuna mayo makes a really yummy lunch or chopped up in a salad with grilled chicken, cherry tomatoes, mozzarella and ruccola.... Mmmmmm I really love your potato salad idea, will definitely give that a try! Thanks

I love avocados, I put them on nearly everything when they are around. My favorite way to eat them is inside a chili bean burrito or on top of a hot quesadilla with chili. Yum!

Hello Sha,

Maybe it is the association with vegetables because of the green colour of the flesh that people use it more in savoury dishes. I have never seen avocado in a fruit salad for example. But we do put pear or strawberries in our green salads....something to ponder over :-)
