Pasta with Sage and Lemon Zest

Our ‘best performing’ herb in the garden is sage. So we came up with a nice recipe to use some of the fresh young leaves. It’s simple and absolutely delicious, the sage leaves become nice and crisp with an intense flavor that works perfect with the lemon. The chilli gives it the extra little kick.

This is what you need
Recipe for 2 persons
200 grams of spaghetti (or pasta of choice)
Half a white onion
Half of a red chilli pepper
Lemon juice and zest (1/4 of a big lemon)
12 leaves of sage
Sea salt
Olive oil

This is how you prepare the pasta
Fry the very finely chopped half onion and chilli with a little sea salt in some oil in a frying pan on medium heat. Meanwhile cook 200 grams of spaghetti in a large pan of boiling water with some salt. Add the lemon juice to the onion and chilli. When the onions are soft you can add the sage leaves and bake them crispy. Take the pan from the heat and add the pasta. Stir well and add some course sea salt to taste and a gulp of your best olive oil. Top it of with some lemon zest. Enjoy!
