Banana cakes with wild cherries

What to do with three ripe bananas. You can eat them or….make banana cakes. Much more fun. It was my ‘very important baking day’ anyway, and I had already made pie, cookies and bread to feed the entire town, so a few more cakes was the perfect way to finish.
I quickly leafed trough a few books and decided on the one Nigella suggested in her role as kitchen Goddess, but she got from Andrew Schloss and his ‘One-Pot Cakes’: Banana cakes with cherries and white chocolate, sounds like a good match to me. And I love one-pot recipes, the simplicity of it, and out comes something wonderful! That is, if it works. This recipe does.
As for the dried cherries, that’s a bit of a problem in Holland. I have not been able to find them. So, I used a can of amarene (wild Italian) cherries. They have a very sweet and distinctive taste. They didn’t disappoint in this recipe. Only one remark (for next time): more cherries! 40 grams is not enough. My husband said he had to take a bike from one cherry to the next…
