Tiramisu

Believe me, Tiramisu doesn’t come any better than this. This recipe originates from an Italian family and they know how to make the stuff. Tira mi su means: ‘pull me up’, and if you put away to much you’ll understand why. The only down site to this delicious dessert is the amount of calories. But who is counting when eating this!

Ingredients
250 grams of mascarpone
75 grams of powdered sugar
3 organic eggs (split egg white from egg yolk)
175 grams of sponge fingers (Savoiardi)
Amaretto liqueur
Good quality espresso coffee
Cocoa powder

Prepare
- Mix egg yolk with powdered sugar
- Add mascarpone and Amaretto and mix well.
- Whip the egg whites
- Carefully mix the egg white through the mascarpone, Amaretto, egg yolk and sugar whip.
- Dunk sponge fingers briefly in espresso coffee
- Put sponge fingers in a bowl
- Scoop a layer of the whip on top of the sponge fingers
- Then add another layer of sponge fingers
- Add another layer of the whip
- Sprinkle cocoa powder on top of the last layer of whip (use a sieve for a nice effect).
